Préparation

1. Cut the mushrooms into strips and finely mince the shallot.
2. In a small bowl, beat the eggs and season with salt and pepper.
3. Heat the butter in a small pan over medium heat. Add the shallot and mushrooms and cook until the mushrooms release all their water. Add a bit of parsley at the end.
4. Pour the eggs into the pan, mixing immediately with the vegetables. Turn heat to low and cook for 5-10 minutes, depending on the desired consistency. Fold in half, serve, and enjoy right away!
