Easy noodle-free Chinese soup

Vous avez besoin de :
  • 1 litre chicken or vegetable stock
  • 1 chicken breast, chopped
  • 25 g prawns, deveined and cooked
  • 200 g grey oyster mushrooms, chopped
  • 30 g bean sprouts
  • 1 shallot
  • 1 clove garlic
  • 1 tablespoon soy sauce
  • A few fresh coriander leaves
  • 2 tablespoons olive oil
  • Salt and pepper
Préparation
  • Chop the mushrooms, shallot, and garlic and sauté in a hot pan with 2 tablespoons olive oil for 4-5 minutes. Add the soy sauce and salt and pepper to taste. Add the chopped chicken and continue cooking until the meat is done (5-6 more minutes).
  • Meanwhile, bring the stock to a boil in a large pot. Cut the bean sprouts in half.
  • Divide the chicken and vegetables between four serving bowls. Add the prawns and bean sprouts, then pour the hot stock over the mixture.
  • Add a few fresh coriander leaves to each bowl right be serving.

This noodle-free Chinese inspired soup is loaded with healthy vegetables and lean protein. There’s plenty of bulk to fill you up…you won’t miss the noodles, promise! Don’t hesitate to experiment with different vegetables (like bok choy or carrots), or even to replace the meat with more veg for a vegan Chinese soup.

The key to this recipe is simplicity. If you want to add fish sauce, rice vinegar, chili paste, or ginger…go ahead. However, we wanted to create a comforting recipe that hits the spot when Chinese cravings strike, but takes less than 30 minutes to make and is far healthier than the average Chinese takeout. So doctor it up however you like, but definitely add this base recipe to your regular rotation. Your taste buds (and the rest of your body) will thank you!
