Mushroom tempura

Vous avez besoin de :
  • Handful of oyster mushrooms (3-4 per person)
  • 1 cup flour
  • 1 tablespoon corn starch
  • 1 1/2 cups seltzer water
  • Salt and pepper
  • Chopped chives
  • Frying oil
Préparation
  1. Combine the flour, corn starch, salt, and cold seltzer water in a mixing bowl. Add the chives, salt, and pepper.
  2. Heat the frying oil in a large wok or frying pan (pan should be 1/3 full with oil).
  3. Dip each mushroom in the batter, then drop in the hot frying oil.
  4. When they begin to brown, use a slotted spoon to remove the mushrooms from the oil. Drain immediately with a few sheets of kitchen roll. If cooking a large batch, keep the fried mushrooms warm in the oven while you finish frying the others.
  5. Serve hot alone or with soy sauce or sour cream (or vegan alternative) for dipping. Goes great with a baguette!
