Potato mushroom pancake

Vous avez besoin de :
  • 700 grams potatoes
  • 150 grams Parmesan, thinly sliced
  • 400 grams grey oyster mushrooms
  • 1 handful chervil, chopped
  • 3 tablespoons olive oil
  • 50 grams crushed walnuts
Préparation
  1. Peel the potatoes and use a mandoline to cut into thin slices. Sprinkle with salt and pepper.
  2. Cut the mushrooms into strips and sauté in a little olive oil for 5 minutes.
  3. Spread half of the potatoes over the bottom of a hot skillet with the rest of the olive oil. Add the Parmesan, the mushrooms, and the chervil and walnuts on top of the potatoes, spreading evenly across the surface of the pancake. Then cover the top with the rest of the potatoes.
  4. Once the oil begins to pop and sizzle, reduce the heat and cook for 10 minutes.
  5. Flip the pancake and cook for 10 minutes on the other side.
    TIP: Use a plate to flip the pancake easily.
  6. Absorb the excess oil with a bit of kitchen roll. Serve with a fresh green salad.
